If they are cordon types, you should remove the sideshoots and top them after 5 or 6 trusses of fruit.
Mine are cherry varieties, so not so tall, but still reached to the roof.
I did let some grow crazy to see what happened, they seem a bit healthier, but the fruit are smaller.

What Wylie said. Once there are a few trusses set, it's time to pinch out any new shoots - not only do the toms grow bigger, it avoids the plants collapsing under their own weight.
